Ingredients

  • 2 Vietnamese-style baguettes
  • 1 lb ground pork
  • for seasoning lemongrass, fish sauce, garlic
  • 1 cup each daikon radish and carrot, julienned
  • 2 tablespoons each rice vinegar and sugar
  • to fill jalapeño, cucumber, fresh cilantro
  • 3 tablespoons sriracha mayo

Instructions

  1. 1.Quick-pickle daikon and carrot in rice vinegar, sugar, and salt for 20 minutes.
  2. 2.Season pork with lemongrass, fish sauce, garlic, and sugar; cook in a skillet until caramelized.
  3. 3.Split baguettes and spread sriracha mayo on both sides.
  4. 4.Fill with pork, pickled vegetables, cucumber, jalapeño, and cilantro.
