Chicken Tortilla Soup

Smoky Mexican-style soup with shredded chicken, black beans, corn, and crispy tortilla strips

Ingredients

  • 1 lb chicken breast
  • 1 can (15oz) black beans, drained
  • 1 cup corn kernels
  • 14 oz diced tomatoes
  • 4 cups chicken broth
  • 1 tablespoon chipotle in adobo
  • as needed onion, garlic, cumin
  • to serve tortilla strips, sour cream, lime

Instructions

  1. 1.Sauté onion and garlic; add chipotle and cumin, cook 1 minute.
  2. 2.Add raw chicken, broth, tomatoes, beans, and corn; simmer 20 minutes.
  3. 3.Remove chicken, shred, and return to pot; season.
  4. 4.Serve topped with tortilla strips, sour cream, avocado, and lime.
