Ingredients

  • 8 oz merguez or spicy lamb sausage
  • 6 large eggs
  • 28 oz canned diced tomatoes
  • 2 tablespoons harissa paste
  • 2 / 1 diced bell peppers and onion
  • 1/2 cup labneh or Greek yogurt
  • 4 pita bread

Instructions

  1. 1.Cook crumbled sausage; add peppers, onion, and harissa, cook 5 minutes.
  2. 2.Stir in tomatoes; simmer 15 minutes.
  3. 3.Crack eggs into sauce; cover and cook 6-8 minutes.
  4. 4.Dot with labneh; serve with pita.
