Ingredients

  • 2 lbs, boneless chicken thighs
  • 2 tablespoons achiote paste
  • 2 peppers chipotle in adobo
  • 1/4 cup pineapple juice
  • 1 cup, grilled pineapple chunks
  • 8 corn tortillas
  • to top cilantro, white onion, lime

Instructions

  1. 1.Blend achiote, chipotle, pineapple juice, and garlic for marinade.
  2. 2.Marinate chicken 1-4 hours; grill or broil until charred.
  3. 3.Slice thin and serve in warm corn tortillas.
  4. 4.Top with grilled pineapple, cilantro, onion, and lime.
