Ingredients

  • 8 oz cavatappi pasta (or pasta of choice)
  • 2 pints cherry tomatoes
  • 8 oz block feta cheese
  • 1/2 cup extra virgin olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cloves garlic cloves, minced
  • 1/4 cup plus more fresh basil, chopped

Instructions

  1. 1.Preheat oven to 400°F and place tomatoes in a baking dish; toss with olive oil, salt, and pepper.
  2. 2.Nestle the feta block in the center, flipping to coat in oil, and bake for 35 minutes until tomatoes burst.
  3. 3.Cook pasta separately in salted water until al dente and reserve 1/2 cup pasta water if needed.
  4. 4.Add garlic and basil to the hot feta and tomatoes, then stir in cooked pasta, loosening with pasta water if desired.
  5. 5.Garnish with more basil and serve immediately.
