Ingredients

  • 1 heaping cup ripe mashed banana
  • 1/2 cup natural peanut butter (creamy or crunchy)
  • 2 large eggs
  • 2 tablespoons pure maple syrup or honey
  • 2/3 cup unsweetened almond milk (or milk of choice)
  • 1 teaspoon vanilla extract
  • 2 cups old-fashioned rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/3 cup dark chocolate chips
  • 2 tablespoons dark chocolate chips for topping
  • 1/3 cup chopped walnuts (optional)

Instructions

  1. 1.Preheat oven to 350°F, line a 12-cup muffin pan with liners, and coat with nonstick spray.
  2. 2.Whisk banana, peanut butter, eggs, maple syrup, almond milk, and vanilla until smooth.
  3. 3.Stir in oats, baking powder, cinnamon, and salt, then fold in 1/3 cup chocolate chips.
  4. 4.Divide batter among muffin cups, sprinkle remaining chocolate chips (and walnuts if using).
  5. 5.Bake 20-25 minutes until set and lightly golden; cool before serving.
  6. 6.Drizzle with extra nut butter just before eating if desired.
