Ingredients

  • 3 lbs beef chuck roast
  • 4 / 2 dried guajillo and ancho chilies
  • 4 Roma tomatoes
  • 3 cups beef broth
  • 1/2 tsp each cinnamon, cumin, oregano, cloves
  • 16 corn tortillas
  • to fill Oaxacan cheese, cilantro, diced onion, lime

Instructions

  1. 1.Toast and soak chilies; blend with tomatoes, garlic, and spices.
  2. 2.Brown beef; add chili sauce and broth; braise at 300°F for 4-5 hours.
  3. 3.Shred beef; skim fat from consommé.
  4. 4.Dip tortillas in consommé, fill with beef and cheese, cook on griddle until crispy; serve with consommé for dipping.
