Beef Enchiladas

Rolled corn tortillas filled with seasoned ground beef and smothered in red enchilada sauce

Ingredients

  • 1.5 lbs ground beef
  • 12 corn tortillas
  • 2 cups red enchilada sauce
  • 2 cups shredded Mexican cheese blend
  • as needed onion, garlic, taco seasoning
  • to serve sour cream, guacamole, cilantro

Instructions

  1. 1.Brown beef with onion, garlic, and taco seasoning; drain.
  2. 2.Warm tortillas; fill each with beef and a tablespoon of cheese; roll up.
  3. 3.Place seam-side down in a baking dish; pour enchilada sauce over top; sprinkle with cheese.
  4. 4.Bake at 350°F for 20-25 minutes; serve with sour cream and guacamole.
