Ingredients

  • 2.5 lbs beef chuck, large chunks
  • 2 cans (13.5oz each) coconut milk
  • 3 lemongrass stalks, bruised
  • 1 inch piece galangal or ginger
  • 6 / 4 / 8 shallots, garlic, red chilies
  • 1/4 cup toasted coconut (kerisik)
  • 1 teaspoon each turmeric and coriander powder

Instructions

  1. 1.Blend shallots, garlic, and chilies into a paste; fry in oil until fragrant.
  2. 2.Add beef, lemongrass, galangal, and spices; stir well.
  3. 3.Pour in coconut milk; simmer uncovered 2-3 hours, stirring occasionally.
  4. 4.Cook until liquid evaporates and beef turns dark and caramelized; stir in toasted coconut.
