Black Bean Soup

Thick and satisfying black bean soup with smoked paprika, cumin, and a cilantro garnish

Ingredients

  • 3 cans (15oz each) black beans, drained
  • 1 large onion, diced
  • 4 garlic cloves, minced
  • 3 cups vegetable broth
  • 1 teaspoon each smoked paprika and cumin
  • 2 tablespoons lime juice
  • to serve cilantro
  • 1 to serve avocado, sliced

Instructions

  1. 1.Sauté onion and garlic in olive oil; add smoked paprika and cumin, cook 1 minute.
  2. 2.Add beans and broth; simmer 15 minutes.
  3. 3.Use an immersion blender to partially blend for a thick, creamy texture.
  4. 4.Finish with lime juice; top with cilantro and sliced avocado.
