Ingredients

  • 3 lbs beef stew meat, cubed
  • 1 bottle Burgundy or Pinot Noir
  • 1 cup pearl onions
  • 1 lb cremini mushrooms, quartered
  • 4 oz lardons (thick-cut bacon)
  • as needed beef broth, tomato paste, garlic
  • bouquet garni thyme, bay leaves, parsley

Instructions

  1. 1.Brown lardons; remove, then sear beef in batches in the fat.
  2. 2.Deglaze with wine; add broth, tomato paste, and bouquet garni; braise at 325°F 2-3 hours.
  3. 3.Sauté pearl onions and mushrooms; add to stew last 30 minutes.
  4. 4.Thicken sauce if needed; serve over egg noodles or with crusty bread.
