Fall-off-the-bone beef short ribs braised in red wine and aromatics

Ingredients

  • 4 lbs bone-in beef short ribs
  • 1.5 cups dry red wine
  • 2 cups beef broth
  • 1 each diced onion, carrot, celery
  • 2 tablespoons tomato paste
  • as needed garlic, thyme, bay leaves, rosemary
  • to serve mashed potatoes or polenta

Instructions

  1. 1.Season ribs generously; sear in a Dutch oven until deeply browned on all sides.
  2. 2.Sauté vegetables and garlic; add tomato paste, wine, and broth.
  3. 3.Return ribs; braise covered at 325°F for 3–3.5 hours until fork-tender.
  4. 4.Skim fat, reduce sauce, and serve ribs over mashed potatoes.
