Breadfruit in Butter Sauce

Sliced tender breadfruit smothered in a garlicky tomato butter sauce, a Caribbean classic

Ingredients

  • 1/2 breadfruit
  • 1/2 onion
  • 1 tablespoon olive oil
  • 125 g butter
  • 3 Medium onions
  • 1 tablespoon chopped garlic
  • 500 ml tinned tomatos
  • 3 tablespoons parsley
  • 1 tablespoon lime juice
  • 1 to taste salt
  • 1 to taste pepper
  • 250 ml water
  • 1 to taste red pepper sauce
  • 1 garnish parsley

Instructions

  1. 1.Cut the breadfruit, remove the seeds in the core, and peel. Boil in salted water with a little onion and oil, over high heat until tender and drain.
  2. 2.Meanwhile, melt the butter in a frying pan and lightly brown the onion rings. Add the garlic, tomatoes, parsley, lime juice, salt, and pepper. Continue to sauté for a couple of minutes. Add the water, bring to the boil and simmer for 5-10 minutes.
  3. 3.Slice the cooled breadfruit and place it in a serving dish. Pour the butter sauce over the breadfruit.
  4. 4.Garnish with chopped fresh parsley.
  5. 5.Serves 4
