Ingredients

  • 1.5 lbs russet potatoes, diced
  • 1 bell pepper, diced
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 1 teaspoon smoked paprika
  • 3 tablespoons olive oil
  • 4 large eggs

Instructions

  1. 1.Microwave diced potatoes 4 minutes to par-cook; drain.
  2. 2.Heat oil in a cast-iron skillet; add potatoes and cook undisturbed 5 minutes until crispy.
  3. 3.Add pepper, onion, garlic, and paprika; cook another 10 minutes, stirring occasionally.
  4. 4.Make wells, crack in eggs, cover, and cook until whites set. Season and serve.
