Chicken Biryani

Fragrant layered rice dish with marinated chicken, saffron, and fried onions

Ingredients

  • 2 cups, soaked 30 min basmati rice
  • 2 lbs, bone-in chicken thighs
  • 1 cup plain yogurt
  • 2 tablespoons biryani masala
  • 1/4 teaspoon in warm milk saffron threads
  • 2 cups caramelized onions
  • 3 tablespoons ghee

Instructions

  1. 1.Marinate chicken in yogurt and biryani masala for 2 hours; cook in a heavy pot until 80% done.
  2. 2.Par-cook soaked rice with whole spices until 70% done; drain.
  3. 3.Layer rice over chicken, top with fried onions and saffron milk; dot with ghee.
  4. 4.Seal pot with foil and cook on low heat 30 minutes (dum cooking); serve layered.
