Ingredients

  • 4 bone-in, skin-on chicken pieces
  • 28 oz canned diced tomatoes
  • 2 bell peppers, sliced
  • 8 oz mushrooms, sliced
  • 1/3 cup Kalamata olives
  • 2 tablespoons capers
  • 1/2 cup dry white wine

Instructions

  1. 1.Season and brown chicken in a skillet; remove.
  2. 2.Sauté peppers and mushrooms; add wine, tomatoes, olives, and capers.
  3. 3.Return chicken; braise covered on low for 45 minutes.
  4. 4.Serve over polenta or with crusty bread.
