Chicken Shawarma

Middle Eastern spiced chicken thighs served in flatbread with garlic sauce and pickles

Ingredients

  • 2 lbs chicken thighs, boneless
  • 3 tablespoons olive oil
  • 1 teaspoon each cumin, coriander, turmeric, paprika
  • 1/4 teaspoon each cinnamon and allspice
  • 2 tablespoons lemon juice
  • 4 flatbread or pita
  • to fill garlic sauce, sliced tomato, cucumber, pickles

Instructions

  1. 1.Marinate chicken in spices, olive oil, and lemon juice for at least 1 hour.
  2. 2.Roast at 425°F for 20-25 minutes until charred at edges; slice thin.
  3. 3.Warm flatbread; spread garlic sauce, layer chicken slices.
  4. 4.Top with tomato, cucumber, onion, and pickles; wrap tightly.
