Classic Beef Stew

Rich slow-braised beef stew with carrots, potatoes, and a red wine broth

Ingredients

  • 2 lbs beef chuck, cubed
  • 3 medium carrots, chunked
  • 1 lb potatoes, quartered
  • 1 large onion, diced
  • 1 cup red wine
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • as needed garlic, thyme, bay leaves

Instructions

  1. 1.Season and sear beef in batches in a Dutch oven until browned on all sides.
  2. 2.Sauté onion and garlic; add tomato paste and cook 2 minutes.
  3. 3.Add wine, broth, thyme, and bay leaves; return beef, bring to simmer.
  4. 4.Braise covered at 325°F for 90 minutes; add carrots and potatoes, cook another 30 minutes.
