Ingredients

  • 2 split English muffins
  • 4 slices Canadian bacon
  • 4 large eggs
  • 3 large egg yolks
  • 1/2 cup unsalted butter
  • 1 tablespoon lemon juice
  • 1 tablespoon white vinegar

Instructions

  1. 1.Make hollandaise: whisk yolks with lemon juice over simmering water, slowly add melted butter until thick.
