Cottage Cheese Cloud Eggs

Whipped egg-white clouds baked with a cottage cheese yolk pocket for a high-protein, airy breakfast

Ingredients

  • 4 large eggs, separated
  • 1/2 cup cottage cheese
  • 1 tablespoon chives, chopped
  • 2 tablespoons grated parmesan
  • 1 pinch salt
  • 1 pinch black pepper

Instructions

  1. 1.Preheat the oven to 450F and line a baking sheet with parchment.
  2. 2.Beat the egg whites with a pinch of salt to stiff peaks.
  3. 3.Fold in the parmesan and chives, then spoon into four mounds on the sheet.
  4. 4.Make a well in each mound and add a spoon of cottage cheese, then gently drop a yolk on top.
  5. 5.Bake 4 to 5 minutes until the whites are golden and the yolks are just set.
  6. 6.Season with pepper and serve immediately.
