Crème Brûlée

Classic French custard with a caramelized sugar crust - simple and stunning

Ingredients

  • 2 cups heavy cream
  • 5 large egg yolks
  • 1/2 cup sugar
  • 1 pod/teaspoon vanilla bean or extract
  • 6 teaspoons granulated sugar for topping

Instructions

  1. 1.Heat cream with vanilla to just below simmering; whisk yolks with sugar until pale.
  2. 2.Slowly whisk hot cream into yolks; strain into ramekins.
  3. 3.Bake in a water bath at 325°F for 35-40 minutes until just set; refrigerate.
  4. 4.Sprinkle 1 tsp sugar per ramekin; torch until amber and crackling.
