Ingredients

  • 1 cup white rice (dry)
  • 3 cups broccoli florets
  • 1 lb 93/7 ground chicken
  • 1 1/2 teaspoons total salt and pepper
  • 1/4 cup (divided) green onions, sliced
  • 1 teaspoon sesame oil
  • for garnish sesame seeds
  • 1/4 cup low sodium soy sauce
  • 1/4 cup chicken broth
  • 3 tablespoons brown sugar
  • 1 tablespoon fresh ginger, minced
  • 1 tablespoon garlic, minced
  • 1 tablespoon rice vinegar
  • 1 teaspoon sriracha
  • 1 tablespoon cornstarch

Instructions

  1. 1.Cook rice according to package directions and steam broccoli until tender-crisp.
  2. 2.Brown ground chicken with the white parts of the green onions, seasoning with salt and pepper.
  3. 3.Whisk soy sauce, broth, brown sugar, ginger, garlic, rice vinegar, sriracha, and cornstarch, then pour over chicken and simmer until thickened.
  4. 4.Finish with sesame oil, garnish with remaining green onions and sesame seeds, and assemble bowls with rice, broccoli, and chicken.
