Ingredients

  • 2 large eggplant
  • 2 cups breadcrumbs
  • 1 cup, grated Parmesan cheese
  • 3 beaten eggs
  • 24 oz marinara sauce
  • 2 cups, shredded mozzarella cheese
  • 1/4 cup fresh basil

Instructions

  1. 1.Salt eggplant slices and let drain 30 minutes; rinse and dry.
  2. 2.Dip in egg then breadcrumb-Parmesan mixture; bake at 400°F 20 minutes, flipping once.
  3. 3.Layer eggplant, marinara, and mozzarella in a baking dish; repeat.
  4. 4.Bake at 375°F 20-25 minutes until bubbly; top with fresh basil.
