Falafel Wrap

Crispy baked falafel in a warm pita with tabbouleh, hummus, and tahini

Ingredients

  • 1 cup dried chickpeas, soaked overnight
  • 1/2 onion, roughly chopped
  • 3 garlic cloves
  • 1 cup combined fresh parsley and cilantro
  • 1 teaspoon each cumin and coriander
  • 4 pita bread
  • to fill hummus, tahini, tomatoes, cucumber

Instructions

  1. 1.Pulse chickpeas, onion, garlic, herbs, and spices in a food processor until coarse crumbs.
  2. 2.Form into balls, refrigerate 30 minutes, then bake at 375°F for 20-25 minutes, flipping once.
  3. 3.Warm pitas and spread hummus.
  4. 4.Fill with falafel, tomatoes, cucumber, and a drizzle of tahini.
