French Onion Soup

Rich caramelized onion soup topped with toasted baguette and melted Gruyère

Ingredients

  • 4 large yellow onions, thinly sliced
  • 6 cups beef broth
  • 1/2 cup dry white wine
  • 3 tablespoons butter
  • 8 toasted baguette slices
  • 2 cups Gruyère cheese, grated
  • as needed thyme, bay leaf, garlic

Instructions

  1. 1.Melt butter and caramelize onions over medium-low heat, stirring occasionally, 40-45 minutes until deep golden.
  2. 2.Add wine, deglaze, then add broth, thyme, and bay leaf; simmer 15 minutes.
  3. 3.Ladle soup into oven-safe bowls, top with toasted baguette slices, pile on Gruyère.
  4. 4.Broil 2-3 minutes until cheese is bubbly and golden.
