Ingredients

  • 1/2 cup Greek yogurt
  • 1/2 cup feta cheese
  • 2 tablespoons olive oil
  • 2 teaspoons lemon juice
  • 1 teaspoon lemon zest
  • 1/4 teaspoon garlic powder
  • 1-3 teaspoons water to thin sauce
  • 1 lb lean ground turkey
  • 1 large egg
  • 1/2 cup breadcrumbs
  • 1/4 cup red onion, finely diced
  • 3 cloves garlic cloves, minced
  • 3 tablespoons fresh parsley, chopped
  • 3 tablespoons fresh mint, chopped
  • 1/2 teaspoon dried oregano
  • 3/4 teaspoon total salt and pepper
  • 2 (one red, one orange) bell peppers, sliced
  • 1 medium red onion, sliced
  • 1 1/3 cups orzo
  • 1 teaspoon lemon zest for orzo
  • 2 tablespoons lemon juice for orzo
  • 2 tablespoons butter or olive oil
  • 1/2 cup sliced kalamata olives (optional)

Instructions

  1. 1.Blend yogurt, feta, olive oil, lemon, garlic powder, and water as needed into a smooth sauce; chill.
  2. 2.Mix turkey, egg, breadcrumbs, onion, garlic, herbs, oregano, salt, and pepper; shape into meatballs.
  3. 3.Arrange meatballs with sliced peppers and onions on a sheet pan and bake at 400°F for 17-23 minutes until cooked through.
  4. 4.Cook orzo according to package directions, then toss with lemon zest, juice, butter, and optional olives.
  5. 5.Serve bowls of lemon orzo topped with roasted veggies, meatballs, feta yogurt sauce, and herbs.
