Ingredients

  • 2 12oz each, 1-inch thick ribeye steaks
  • 1 cup, packed fresh parsley
  • 2 tablespoons fresh oregano
  • 4 garlic cloves
  • 2 tablespoons red wine vinegar
  • 1/2 cup olive oil
  • 1/2 teaspoon red pepper flakes

Instructions

  1. 1.Pulse parsley, oregano, garlic, vinegar, and pepper flakes; stream in olive oil for chimichurri.
  2. 2.Season steaks generously with salt and pepper; bring to room temperature.
  3. 3.Grill on highest heat 4-5 minutes per side for medium-rare; rest 5 minutes.
  4. 4.Slice against the grain and serve with chimichurri.
