Halloumi Veggie Skewers

Mediterranean grilled halloumi and vegetable skewers with herb marinade

Ingredients

  • 8 oz halloumi cheese, cubed
  • 1 each chunked zucchini, bell peppers, red onion
  • 1 cup cherry tomatoes
  • 3 tablespoons olive oil
  • 1 teaspoon each dried oregano, garlic powder
  • 2 tablespoons lemon juice
  • to serve tzatziki and pita

Instructions

  1. 1.Marinate halloumi and vegetables in olive oil, oregano, garlic, and lemon 30 minutes.
  2. 2.Thread onto skewers alternating cheese and vegetables.
  3. 3.Grill over medium-high heat 3-4 minutes per side until charred.
  4. 4.Serve with tzatziki and warm pita.
