Crunchy baked oat granola with almonds, maple syrup, and dried cranberries

Ingredients

  • 3 cups rolled oats
  • 1 cup sliced almonds
  • 1/3 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1/2 cup dried cranberries

Instructions

  1. 1.Preheat oven to 325°F; toss oats and almonds with maple syrup, oil, cinnamon, and vanilla.
  2. 2.Spread on a parchment-lined baking sheet; bake 20-25 minutes, stirring halfway, until golden.
  3. 3.Cool completely - it crisps as it cools. Stir in dried cranberries.
  4. 4.Store in an airtight jar up to 2 weeks.
