Jambalaya

Louisiana one-pot jambalaya with chicken, andouille sausage, shrimp, and Cajun spices

Ingredients

  • 1 lb chicken thighs, diced
  • 12 oz andouille sausage, sliced
  • 1 lb large shrimp, peeled
  • 1.5 cups long grain rice
  • 1 cup each the holy trinity (onion, celery, bell pepper)
  • 14 oz diced tomatoes
  • 2 cups chicken broth
  • 2 tablespoons Cajun seasoning
  • 3 cloves garlic, minced

Instructions

  1. 1.Brown sausage and chicken in a large pot; remove and set aside.
  2. 2.Sauté holy trinity until soft; add garlic and Cajun seasoning.
  3. 3.Add tomatoes, broth, rice, and meat; bring to boil, cover, simmer 20 minutes.
  4. 4.Stir in shrimp and cook 5 minutes until pink; serve garnished with green onions.
