Sichuan stir-fried chicken with dried chilies, roasted peanuts, and a bold sauce

Ingredients

  • 1.5 lbs chicken breast, diced
  • 8 dried red chilies
  • 1/2 cup roasted peanuts
  • 3 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon hoisin sauce
  • 1 teaspoon, toasted and ground Sichuan peppercorns
  • as needed garlic
  • as needed ginger
  • as needed scallions
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch

Instructions

  1. 1.Marinate chicken with soy sauce, cornstarch, and sesame oil 15 minutes.
  2. 2.Stir-fry chicken in very hot oil until cooked; remove.
  3. 3.Fry chilies and peppercorns until fragrant; add garlic, ginger, and sauce ingredients.
  4. 4.Return chicken and add peanuts and scallions; toss and serve with rice.
