Ingredients

  • 8 4oz each lamb loin chops
  • 3 garlic cloves, minced
  • 2 sprigs fresh rosemary
  • 2 tablespoons olive oil
  • 1 cup fresh mint
  • 2 tbsp / 1 tsp white wine vinegar and honey

Instructions

  1. 1.Marinate chops with garlic, rosemary, and olive oil 30 minutes.
  2. 2.Make mint sauce: blend mint, vinegar, honey, and a pinch of salt.
  3. 3.Sear chops over high heat 3-4 minutes per side for medium-rare.
  4. 4.Rest 5 minutes; drizzle with mint sauce and serve.
