Lentil Soup

Warming red lentil soup with cumin, turmeric, and a squeeze of lemon

Ingredients

  • 1.5 cups red lentils
  • 1 large onion, diced
  • 2 medium carrots, diced
  • 4 garlic cloves, minced
  • 2 teaspoons cumin
  • 1 teaspoon turmeric
  • 6 cups vegetable broth
  • 2 tablespoons lemon juice

Instructions

  1. 1.Sauté onion, carrots, and garlic in olive oil until softened; add spices, cook 1 minute.
  2. 2.Add rinsed lentils and broth; bring to boil, reduce heat, simmer 25 minutes until lentils dissolve.
  3. 3.Blend half the soup for a creamier texture; stir back in.
  4. 4.Finish with lemon juice, season well, serve with crusty bread.
