Ingredients

  • 1 lb 93% lean ground beef
  • 1/2 small yellow onion, chopped
  • to taste seasonings (salt, pepper, paprika)
  • 2 medium (426 g) russet potatoes, cubed
  • 8 cups (456 g) iceberg lettuce, chopped
  • 4 medium roma tomatoes, chopped
  • 3 oz (84 g) cheddar cheese, shredded
  • as desired pickles (optional)
  • 1/2 cup nonfat Greek yogurt
  • 3 tablespoons ketchup
  • 1 tablespoon mustard
  • 1 tablespoon chopped dill pickles
  • 1 teaspoon pickle juice
  • 1 teaspoon Worcestershire sauce
  • pinch salt & pepper for sauce

Instructions

  1. 1.Air fry or bake the potato cubes until crispy and tender.
  2. 2.Cook ground beef with chopped onion and seasonings until browned; drain excess fat.
  3. 3.Whisk together yogurt, ketchup, mustard, chopped pickles, pickle juice, Worcestershire, salt, and pepper for the burger sauce.
  4. 4.Assemble bowls with lettuce, beef, cheese, potatoes, tomatoes, pickles, and drizzle with sauce.
