Meaty Stuffed Potatoes

Ingredients

  • 3 medium potatoes
  • 8 ounces turkey, diced and cooked
  • 1 cup broccoli, coarsely chopped
  • 1/2 cup onion, chopped
  • 1/2 cup carrot, thinly sliced
  • 3/4 cup hot water
  • 3/4 cup fat-free (skim) milk
  • 1 tablespoon flour
  • 1/4 teaspoon black pepper
  • 1/2 cup low-fat cheese, shredded

Instructions

  1. 1.Wash your hands with soap and water.
  2. 2.Scrub potatoes.
  3. 3.Remove any bad spots.
  4. 4.Do not peel.
  5. 5.Cut each in half, lengthwise.
  6. 6.In a covered saucepan, boil potatoes in just enough water to cover the pieces.
  7. 7.When they are fork-tender (about 15 to 20 minutes), remove from heat and drain.
  8. 8.Set aside. (Note: you can also pierce whole potatoes with a knife or fork in several places and cook in microwave without water until fork tender, then cut each in half, lengthwise).
  9. 9.Meanwhile, in a large skillet sprayed with non-stick cooking spray, combine cooked meat, broccoli, onion, carrots and water.
  10. 10.Boil until vegetables are fork tender - about 5 minutes.
  11. 11.Reduce heat to low.
  12. 12.In a jar with a tight fitting lid, combine milk, flour and pepper.
  13. 13.Shake well.
  14. 14.Stir flour mixture into meat mixture until well blended.
  15. 15.Stir in cheese.
  16. 16.Cook over low heat about 5 minutes longer or until sauce thickens, stirring frequently.
  17. 17.To serve, place 2 potato halves on each plate and mash the middle somewhat.
  18. 18.Spoon about one third cup of the meat mixture over each potato half Cover and refrigerate leftovers within 2 hours.
