Ingredients

  • 2 lbs whole sea bass or fillets
  • 1 cup cherry tomatoes
  • 1/3 cup Kalamata olives
  • 2 tablespoons capers
  • as needed garlic, lemon, fresh herbs (thyme, parsley)
  • 3 tablespoons olive oil

Instructions

  1. 1.Score fish and stuff with garlic, lemon slices, and herbs.
  2. 2.Surround with tomatoes, olives, and capers on a baking dish; drizzle with olive oil.
  3. 3.Roast at 400°F for 25-30 minutes until fish flakes.
  4. 4.Serve with crusty bread to soak up the juices.
