Ingredients

  • 2 cans chickpeas
  • 1 medium cucumber
  • 2 cups cherry tomatoes
  • 1/4 cup red onion
  • 1/2 cup parsley
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice

Instructions

  1. 1.Drain and rinse the chickpeas and add to a large bowl.
  2. 2.Chop the cucumber, tomatoes, onion, and parsley and add them in.
  3. 3.Whisk the olive oil and lemon juice with salt and pepper, then toss everything together.
  4. 4.Chill for 15 minutes before serving.
