Hearty Italian vegetable soup with cannellini beans, pasta, and fresh herbs

Ingredients

  • 2 cans (15oz each) cannellini beans, drained
  • 28 oz can diced tomatoes
  • 4 cups vegetable broth
  • 1 medium zucchini, diced
  • 2 each carrots and celery, diced
  • 1 cup small pasta (ditalini)
  • as needed garlic, onion, Italian seasoning

Instructions

  1. 1.Sauté diced onion, carrots, and celery in olive oil 5 minutes; add garlic and Italian seasoning.
  2. 2.Add tomatoes, broth, and beans; bring to a boil and simmer 15 minutes.
  3. 3.Add zucchini and pasta; cook until pasta is tender, 8-10 minutes.
  4. 4.Serve with optional Parmesan (omit to keep vegan) and crusty bread.
