Greek layered casserole with spiced lamb, eggplant, and creamy béchamel

Ingredients

  • 2 large eggplant, sliced
  • 1.5 lbs ground lamb or beef
  • as needed onion, tomato paste, cinnamon, allspice
  • 14 oz crushed tomatoes
  • 2 cups whole milk
  • 4 tablespoons each butter and flour
  • 2 yolks / 1/2 cup egg yolks and Parmesan

Instructions

  1. 1.Salt and grill or bake eggplant slices until tender.
  2. 2.Cook spiced meat sauce with onion, cinnamon, and tomatoes.
  3. 3.Make béchamel with butter, flour, and milk; enrich with egg yolks and Parmesan.
  4. 4.Layer eggplant, meat, repeat, then top with béchamel; bake at 375°F for 45-50 minutes.
