Ingredients

  • 2 cans (5oz each) canned tuna in olive oil
  • 1/2 lb green beans, blanched
  • 4 halved hard-boiled eggs
  • 1/3 cup Niçoise olives
  • 1 cup cherry tomatoes
  • 12 oz baby potatoes, boiled
  • for dressing Dijon mustard, lemon juice, olive oil

Instructions

  1. 1.Blanch green beans in salted water 3 minutes; shock in ice water.
  2. 2.Whisk Dijon mustard, lemon juice, and olive oil for dressing.
  3. 3.Arrange lettuce, green beans, potatoes, tomatoes, eggs, tuna, and olives on a platter.
  4. 4.Drizzle with dressing and serve.
