One Pan Cheesy Chicken & Broccoli Pasta

Ingredients

  • 1 lb chicken breast, diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon paprika
  • 1/2 small white onion, diced
  • 3 cloves garlic cloves, minced
  • 2 cups chicken broth
  • 1 cup fat-free milk
  • 8 oz pasta (short cut)
  • 2 cups broccoli, chopped
  • 1 tablespoon yellow mustard
  • 1/2 cup nonfat Greek yogurt
  • 1 1/2 cups cheddar cheese, shredded

Instructions

  1. 1.Season and sear diced chicken until browned, then remove from the pan.
  2. 2.Sauté onion and garlic, add broth and milk, and bring to a boil.
  3. 3.Stir in pasta and cook halfway before adding broccoli to finish cooking.
  4. 4.Reduce heat, mix in mustard, yogurt, and cheddar until melted and creamy, then return chicken to the pan.
