Ingredients

  • 8 oz rice noodles
  • 1 lb shrimp, peeled
  • 3 large eggs
  • 3 tablespoons tamarind paste
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • to top bean sprouts, peanuts, scallions, lime

Instructions

  1. 1.Soak rice noodles in warm water 30 minutes; drain.
  2. 2.Mix tamarind, fish sauce, and sugar for sauce.
  3. 3.Stir-fry shrimp in a hot wok; push aside, scramble eggs.
  4. 4.Add noodles and sauce, toss; serve topped with peanuts, bean sprouts, and lime.
