Perfect Roast Chicken

Crispy-skinned whole roast chicken with herb butter and roasted vegetables

Ingredients

  • 1 4-lb whole chicken
  • 4 tablespoons butter, softened
  • 4 minced garlic cloves
  • 2 tablespoons each fresh thyme and rosemary
  • 1 halved lemon
  • 2 lbs root vegetables (carrots, potatoes, onion)
  • as needed olive oil, salt, and pepper

Instructions

  1. 1.Pat chicken dry; mix herb butter with garlic, rub under skin and all over.
  2. 2.Stuff cavity with lemon and herb sprigs; season generously with salt and pepper.
  3. 3.Roast at 425°F on a bed of vegetables 60-75 minutes until juices run clear.
  4. 4.Rest 15 minutes before carving; serve with pan juices.
