Al dente trofie or linguine tossed with fresh basil pesto and cherry tomatoes

Ingredients

  • 12 oz linguine or trofie pasta
  • 2 cups fresh basil leaves, packed
  • 1/2 cup, grated Parmesan cheese
  • 1/4 cup pine nuts
  • 2 garlic cloves
  • 1/2 cup extra virgin olive oil
  • to serve cherry tomatoes and burrata

Instructions

  1. 1.Blend basil, Parmesan, pine nuts, and garlic; stream in olive oil until smooth.
  2. 2.Cook pasta al dente; reserve 1/2 cup pasta water.
  3. 3.Toss pasta with pesto, loosening with pasta water to desired consistency.
  4. 4.Top with halved cherry tomatoes and fresh burrata.
