Ingredients

  • 1 cup quinoa, cooked
  • 1 large sweet potato, cubed
  • 1 can (15oz) chickpeas, drained
  • 2 cups kale, massaged
  • 1 sliced avocado
  • 3 tablespoons tahini
  • for dressing lemon juice, garlic, water

Instructions

  1. 1.Roast sweet potato and chickpeas at 400°F with olive oil and spices for 25 minutes.
  2. 2.Cook quinoa; whisk tahini, lemon juice, garlic, and water to dressing consistency.
  3. 3.Build bowls with quinoa, kale, sweet potato, chickpeas, and avocado.
  4. 4.Drizzle generously with tahini dressing.
