Louisiana Monday meal - slow-cooked red kidney beans with andouille sausage

Ingredients

  • 1 lb, soaked overnight dried red kidney beans
  • 12 oz, sliced andouille sausage
  • 1 cup each the holy trinity (onion, celery, bell pepper)
  • 4 minced garlic cloves
  • 1 tablespoon Cajun seasoning
  • 2 sprigs / 2 leaves thyme and bay leaves
  • 3 cups, cooked long grain rice

Instructions

  1. 1.Sauté sausage until browned; remove. Cook holy trinity and garlic in same pot.
  2. 2.Add drained beans, broth to cover, Cajun seasoning, thyme, and bay leaves.
  3. 3.Simmer 2.5-3 hours, mashing some beans for creaminess.
  4. 4.Return sausage; serve over white rice with hot sauce.
