Ingredients

  • 3/4 cup steel-cut oats
  • 2 1/2 cups vegetable broth
  • 1/3 cup grated parmesan
  • 2 large eggs
  • 2 cups baby spinach
  • 1 tablespoon olive oil
  • 1/2 teaspoon black pepper

Instructions

  1. 1.Simmer the oats in broth over medium heat for 12 to 15 minutes until creamy, stirring often.
  2. 2.Lower six-minute soft-boiled eggs into simmering water, then chill and peel.
  3. 3.Wilt the spinach into the oats during the last 2 minutes.
  4. 4.Stir in the parmesan and olive oil until glossy.
  5. 5.Divide into bowls, halve an egg over each, and finish with black pepper.
