Eggs poached in a spiced tomato and pepper sauce - a beloved Middle Eastern classic

Ingredients

  • 6 large eggs
  • 28 oz canned crushed tomatoes
  • 2 medium, diced red bell peppers
  • 1 medium, diced onion
  • 4 minced garlic cloves
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons olive oil
  • to serve feta and fresh parsley

Instructions

  1. 1.Sauté onion and peppers in olive oil until softened, add garlic and spices, cook 1 minute.
  2. 2.Pour in crushed tomatoes, season with salt and pepper, simmer 10 minutes.
  3. 3.Make wells in sauce and crack eggs in; cover and cook 6-8 minutes until whites are set.
  4. 4.Top with crumbled feta and parsley; serve with crusty bread.
