Shrimp Fried Rice

Ingredients

  • 4 cups cooked day-old rice
  • 1 lb shrimp, peeled
  • 3 large eggs
  • 1 cup frozen peas and carrots
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • as needed garlic, ginger, scallions

Instructions

  1. 1.Cook shrimp in a very hot wok until pink; remove.
  2. 2.Scramble eggs in the same wok; add garlic and ginger.
  3. 3.Add cold rice, breaking up clumps; stir-fry over high heat.
  4. 4.Add peas, carrots, soy sauce, sesame oil, shrimp, and scallions; toss and serve.
