Ingredients

  • 2 lbs chicken thighs
  • 4 medium carrots
  • 3 stalks celery
  • 2 cups green beans
  • 1 medium onion
  • 4 cups chicken broth
  • 1 teaspoon thyme
  • 1 whole bay leaf

Instructions

  1. 1.Add the chicken, chopped vegetables, broth, and herbs to the slow cooker.
  2. 2.Cover and cook on low for 7 hours until the chicken is tender.
  3. 3.Shred the chicken with two forks and stir back into the stew.
  4. 4.Discard the bay leaf, season to taste, and serve.
